    Dan is right on. Buy local when it makes sense and fill-in with the other stuff. The 80/20 rule can work in this way, too. Eat most food in-season but no reason to give up your coffee, tea, sugar, bananas, chocolate or avocados.

    I am also a big Jerusalem artichoke fan but love them raw best. They have incredibly prebiotic properties which can help do away with the need for probiotics.
