I've been wanting to make this since joining the team, and I finally did last weekend. Working with beets is not my cup of tea, but this hummus is worth it! Really delicious!

Hi Caitlin,

I guess it is time to experiment. The edamame and lemon hummus sounds wonderful. Feel free to share it with us if your boss doesn't mind!

Best,
Esperanza

I work for a grocery store and we've just hired a new chef in the catering department who will be re-vamping the menu so that it changes with the seasons. He also used a different vegetable to substitute chickpeas for hummus - it's a edamame and lemon hummus and he served it on homemade tortilla chips - yum! I will have to pass the beet idea onto him too!
