I have been reading all sorts of blog posts that are anti-foodie lately (of course, they’ve been around for quite some time, they’ve just recently been brought to my attention) and I’d like to clarify some things.

My good friend Liza de Guia publishes yet another stunning video entitled “The Historic Gastronomist,” about a Brooklyn women who is resuscitating centuries old recipes from American history. This is a tremendous story and ties in so dearly with my ideas for Farm to Table.
First, allow me to highlight an issue that is rarely raised. Outside of the sheer yuck factor, one very compelling reason to avoid eating commodity ground beef is that it has very little flavor. Per my earlier post, the reason is that large packers do not use flavor as a primary goal in the first place. Instead, their focus is cost control, to produce the lowest cost burgers that you’re still willing to eat.
Oysters from waters in the region used to be big business in New York City, and Michael Osinski wants them to be that way again. Mr. Osinski is the protagonist in this satisfying profile of a man obsessed with farming these once-plentiful bivalves. Mr. Osinski’s recent past has a whiff of intrigue that is not covered here. He is a retired software programmer who, in a New York Magazine article, confessed to writing some of the code that played a role in the mortgage meltdown.
